Emilia Romagna is to Italy what the Loire Valley is to France: the primary source of fruits,vegetables and other food commodities. Parma ham, balsamic vinegar, parmesan cheese, mortadella: these are but a few of the food staples from Emilia Romagna. Just north of Tusany, the region still follows a straight axis established by the Romans centuries ago.
This wine and food tour will start in Parma, home of Barilla pasta. During our stay in the heart of Parma, we will have a cooking class conducted by chefs of the Barilla Academy. We’ll visit producers of Parma and Culatello ham, parmesan cheese, balsamic vinegar and pasta. Of course we’ll visit wineries and discover that the area produces more than lambrusco. And there will be time to visit the fascinating Ferrari car museum as well as Modena, famous for its balsamic vinegar.
When our tour ends in Bologna on Oct 14, you’ll depart Italy with a deeper understanding of its culinary traditions.
