Miami Culinary School: State of the Art for Wine & Food

I had the opportunity yesterday to attend a presentation in MIami: Simply Italian: Great Wines Americas Tour 2013, held this time at Miami Dade Community College Wolfson

Whites of Italy” and focued on 7 wines, two of which are strong possibilities for 2014 wine tours for Wine Lovers: Franciacorta and Lake Garda. The tour would focus on Lombardy and would include Pavese, Franciacorta, Lake Garda and Valtellina, a gorgeous area of Italy which except for parts of the Lake Country, is not visited by many Americans. We tasted the Ricci Curbastro 3 Glass winner for 2012, and the Lugana Limne 2011 from Tenuta Roveglia. The second seminar was led by by colleague, Charlie Arturaola and was called the “Iconic Reds of Italy.” The seminars were followed by a wine and food pairing in the kitchen of the Miami Culinary Institute, a division of MDCC. In a state of the art teaching kitchen Master Chef Sarah Feinstein, led student chefs in the preparation of 4 courses paired with wines: Salmon tartare and Prosecco; Scallop Croquetas and Prosecco; Vietnamese grilled steak and Valpolicella Ripasso; and dark chocolate trio with Amarone. It was very professionaly prepared and presented. In the afternoon, was a walk around tasting of  dozens of Italian wines, many seeking importers, held in the historic Freedom Tower. It was a great day for wine lovers and I also had the chance to meet Chip Cassidy and Fred Tasker, both long time Miami wine afficionados.
